  1. Quarter or dice potatoes and rinse/ drain thoroughly in a pot. Refill pot with enough water to cover the potatoes and bring to a boil. Boil for approximately 8-10 minutes or until tender (poke with knife or fork).
  2. While potatoes are boiling, heat pan with oil on medium (peanut oil, avocado oil, canola oil) and add sliced red onion, stirring frequently.
  3. When potatoes are tender, strain and add to pan with red onions. Season with desired amount of paprika, garlic, salt, pepper and parsley (if dried parsley). Finish frying on medium-high heat to crisp, stirring frequently.
  4. In another pan, fry meat free sausage links on medium heat. Once sausages are golden brown and heated throughout, add maple syrup to pan and turn off heat.
  5. Serve potatoes, sausage and sliced avocado hot. Garnish with fresh parsley and sliced lemon (for potatoes) if desired.
Recipe Notes

Keep an eye on your boiling potatoes to ensure they don’t get too soft. If the potatoes are boiled for too long, they will turn into mashed potatoes in your pan. If you accidentally over boil the potatoes, season and throw them into the oven on 450 on the top rack to roast/ crisp up in lieu of pan frying.
