Easy Vegan Alfredo

The highlight of my day so far has been buying a food processor. I’ve been meaning to get one for awhile and honestly, now I just believe everyone needs one. I mean, think of all the delicious things you can make with a food processor. The first thing I thought about, was Vegan Alfredo…so I’m about to serve you with this goodness.

Like many things I make, it was quick and easy. Prep time is minimal, it takes 12 minutes to boil your cauliflower and onion, seconds to puree it in the food processor and that’s it.

So before I go on, i’ll mention that it’s pretty essential for you to have a food processor to make this sauce. The other thing that makes a difference in this is nutritional yeast. The nooch gives it a cheesy kind of flavour BUT it is not make or break if you don’t have it, you may just need to salt it a bit more.

The texture turned out nice and creamy, which is everything I could have ever asked for from an Alfredo sauce made out of pureed vegetables. It tastes so nice, you won’t believe it’s gluten, dairy and soy free. Plant power, my dudes.

Instructions
  1. Boil cauliflower florets and onion for approximately 12 minutes.
  2. Once softened, place cauliflower, onion and all other ingredients except peas and parsley in the food processor.
  3. Pour over cooked pasta, add cooked peas and parsley. Mix.
  4. Garnish with chives if desired.
Recipe Notes

Serving amounts of salt, pepper and garlic vary based on preference.
As mentioned above, nutritional yeast is not necessary if you don't have it- still tastes great without it!
Any dairy free "buttery spread" will do but Melt is organic and gluten free.
