  1. Bring large pot of water to a boil. Add 3/4 or 1 full box of macaroni pasta. Preheat oven to 450 degrees to prepare for tofu.
  2. When pasta is cooked, strain noodles but reserve 1-2 cups of boiled water. In a pot on low heat, add approximately 1/2 cup of reserved water and stir in dairy free cheddar shreds. Add water and more shreds as needed until “cheesy” consistency is reached. Mix in cooked noodles and stir to coat well.
Tofu Cooking Intructions
  1. While boiling pasta, wrap tofu in paper towel and firmly press to remove excess moisture. Cut tofu into strips and place on non-stick baking sheet. Lightly season with salt and pepper and place in oven. Let bake for 6-8 minutes on each side or until crispy outer layer is formed. Brush with BBQ sauce and place in oven for an additional 3-5 minutes.
Recipe Notes

Preheat oven while bringing your water to a boil so that you can keep the pasta and tofu cook time in line. Dice green onion at any time and add to completed mac and no cheese pasta. Once everything is complete, fill a wrap of your choice and enjoy!
