BBQ Crispy Tofu Mac Wrap

Well, the name says it all. This is a limited ingredient, relatively quick lunch or dinner idea that will be sure to satisfy that comfort food craving you’re having. The “cheez” sauce doesn’t require a food processor or many ingredients. In fact, it only requires dairy free cheese and leftover pasta water. The consistency rivals every other “cheez” sauce I’ve attempted over the years and has quickly become my go to.

Another great thing to note about this recipe is that the tofu requires nothing but BBQ sauce, so no need to worry about making any sort of coating/ breading concoctions for this one.

Instructions
  1. Bring large pot of water to a boil. Add 3/4 or 1 full box of macaroni pasta. Preheat oven to 450 degrees to prepare for tofu.
  2. When pasta is cooked, strain noodles but reserve 1-2 cups of boiled water. In a pot on low heat, add approximately 1/2 cup of reserved water and stir in dairy free cheddar shreds. Add water and more shreds as needed until "cheesy" consistency is reached. Mix in cooked noodles and stir to coat well.
Tofu Cooking Intructions
  1. While boiling pasta, wrap tofu in paper towel and firmly press to remove excess moisture. Cut tofu into strips and place on non-stick baking sheet. Lightly season with salt and pepper and place in oven. Let bake for 6-8 minutes on each side or until crispy outer layer is formed. Brush with BBQ sauce and place in oven for an additional 3-5 minutes.
Recipe Notes

Preheat oven while bringing your water to a boil so that you can keep the pasta and tofu cook time in line. Dice green onion at any time and add to completed mac and no cheese pasta. Once everything is complete, fill a wrap of your choice and enjoy!
